Millionaire's Spaghetti

Cooking time: 20 minutes
Serves: 2-3

Even if you bank account doesn't have seven digits, you can eat like it does. Totally decadent, and totally easy to make, Millionaire's Spaghetti is that perfect Sunday night indulgence to celebrate the last moments of your weekend.


250 grams of spaghetti
30 grams of Sliced Istrian Black Summer Truffles
1 tablespoon of unsalted butter
70 ml of cream
50g of freshly grated XO Pag Cheese
Nin Fleur de Sel
Istrian White Olive Monovarietal Extra Virgin Olive Oil

Get the pasta cooking in a big pot of boiling salted water until al dente.

When the pasta is cooked, reserve 120ml of pasta water before draining. Add 60ml of reserved pasta water back into the pasta pot, and put over medium-high heat.

Cut the cold butter into small cubes, and whisk them into the bubbling pasta water a little at a time. Whisk in the cream, and finally, the grated and sliced truffles.

Take off the heat and add the pasta. Use tongs to wrap the sauce all around the pasta strands. If you need to thin out the sauce, you have some extra pasta water with which to do so.

Serve right away with a bowl of grated XO Pag Cheese on the side, sprinkle Fleur de Sel and drizzle with extra virgin olive oil to taste.

Throw around some dolla dolla bills y'all.
