Flown in fresh from the oak forests of Istria, the home of the largest white truffle ever found, these diamonds of the culinary world are nothing short of mesmerizing. The white truffle (Tuber magnatum pico), popularly known as the White Alba truffle, produces an aroma and flavor that is gastronomically unique and wonderfully intoxicating.
How to enjoy it
Unlike their black counterpart, white truffles are never cooked, since the bulk of their flavor lies in the strong scent. Just slice them thinly and use them to finish off your eggs, pasta or risotto. The heat of the food will bring out the intense aroma of the white truffle for a fabulous effect. They are best consumed immediately, although they will last for up to 5 days in the fridge.
