British transplant Jo Ahearne takes the most traditional of Dalmatian white grapes and gives it her twist. Three separate vineyards of different ages are picked at different stages to express the full spectrum of Pošip’s flavors – from zesty lemons, to floral peach and a splash of tropical pineapple. Fermented with natural yeast and then kept sur lie for 10 months for that signature texture.
