Nikolas Verjan 2023
Nikolas's father grew up in San Floriano del Collio (Števerjan in Slovenian) and in 2023 Nikolas finally made wine from the family plot, rented back from his great-aunt. Hence the name. The vines, planted in the 60s, are mostly Pinot Grigio, a grape he openly admits to a love-hate thing with. His fix: blend in Chardonnay and Malvasia Istriana for lift and perfume, give it a week on skins, then eleven months across concrete, steel and old wood. Proof that Pinot Grigio can, in fact, be worth talking about.
