The Black Winter Truffle (Tuber Melanosporum), also known as the Perigord truffle, is finest black truffle available. It is in season from January to March, and can be distinguished from other black truffle varieties by its interior appearance - white veins running through black flesh. They are intensely aromatic with superb depth of flavor.
NOTE: We will do our best to match your ordered weight as closely as possible, but we're dealing with mother nature here and may need to make a slight adjustment depending on the exact sizes of the individual pieces.
How to get the most out of your fresh truffle
📅 Truffles are best consumed as soon as possible, but you can store them for 7-10 days.
❄️ Keep them COOL and DRY by putting them in the fridge in the provided air-tight jar on a bed of rice to absorb moisture.
💧 Wash the dirt off just before use with lukewarm water and a wet brush. Keeping the dirt on protects the truffle until use.
👨🍳 When shaving the truffle, thinner is better. Lots of surface area helps warmth bring out the aromas of your truffle.
