Winter black truffles in season (January to March).
The Black Winter Truffle (Tuber Melanosporum), also known as the Perigord truffle, is finest black truffle available. It is in season from January to March, and can be distinguished from other black truffle varieties by its interior appearance - white veins running through black flesh. They are intensely aromatic with superb depth of flavor.
How to use them
Best enjoyed when finely sliced or shaved they can be used uncooked or lightly sautéed in butter which brings out the flavor. Perfect for adding to sauces, pasta dishes or risotto to create a truly memorable dish.
Allow approximately 10 grams of Black Winter Truffles per person for starters, and 15 grams per person for mains.

How to care for them
Black Winter Truffles (Tuber Melanosporum) are perishable but will last for up to a week if stored correctly and according to the care instructions enclosed with your delivery.
NOTE: We will do our best to match your ordered weight as closely as possible, but we're dealing with mother nature here and may need to make a slight adjustment depending on the exact sizes of the individual pieces.
