A traditional local blend made in the back country of Šibenik for hundreds of years has a new incarnation in the hands of Juraj Sladić. In some ways it represents the best of continental and coastal wines, with cold winds from the Promina mountain bringing freshness, and the the soil giving it rich aromas of the south. The grapes are hand-harvested in early September, spend a month on the lees, and then four months in large used oak. The result is a wonderful white with extremely fine acidity and lots of aromas of white fruit. Only 1,500 bottles made.
PAIRS WELL WITH
Roast chicken, Laotian mushroom salad, home made apple tart, and discussing the merits of critical race theory.
