Depending on how far back the family tree of Riesling you go, the closer to the Adriatic you get. That’s why it’s not surprising that the Tomac family have found perfect conditions for the iconic variety in their biodynamic Plešivica vineyards. After spontaneous fermentation it is aged for 10 months on the lees in old 3,000L oak barrels. Expect excellent structure with a great combination of minerality and citrusy-green notes of lime, green apples and flint.
