The signature wine of British MW turned winemaker Jo Ahearne who made her home on Hvar island. The blend consists of local varieties Pošip, Bogdanuša and Kuč each fermented separately with wild yeast and kept on skins for up to 350 days. The final blend is kept sur lie for 20 months for a richer texture that belies it’s low ABV. Think quince, pear, and tangerine zest with a hint of toast, bergamot and honey.
PAIRS WELL WITH
Chicken kottu, rabbit ragu with gnocchi, and the smells of Hvar.
