Known mostly for its salt works and sheep herding, Pag island can be very unforgiving for any kind of farming. But Boris Šuljić found the right spot on the northern end of the island, with sandy soil and a just enough wind protection for his Cabernet Sauvignon and Merlot vines to adapt and thrive. Dark color, berries, sage, minerality and at least a decade ahead of it.
And yes, his restaurant is the place Anthony Bourdain mused about in that No Reservations episode (skip to 29:00).
