Prošek is a traditional dessert wine that holds a special place in Croatian culture. It has been made along the Dalmatian coast for thousands of years. A single grape bunch is left on the oldest vines to dry for an additional two months after the main harvest. The concentrated grapes are then handpicked, fermented, and aged for two years in large oak barrels. Eight kilos of dried grapes give us one delicious litre of dessert wine that works with a wide variety of pairings because doesn't have that heavy, sticky aftertaste. Look for dark chocolate, dry figs, Maraska sour cherries, and herbal spice. Only 4,000 0.5L bottles made.
