Dražen Zanchi, a biophysicist based in Paris, believes science exists to understand nature not to poison it. He planted Dobričić, a rugged almost extinct variety, on a small plot north of Split and let it grow wild without pruning. This “jungle vineyard” paid him back with 1kg of unadulterated fruit per vine, which he lets spontaneously ferment with native yeasts. After two years in old oak, the result is a spectacularly pure wine, with no sulphur or additives of any kind. Dark ruby in color with berries, herbs, balsamic and pine sap. Only 600 bottles made. Give it an hour or two to breathe before serving.
