Mama Karlic’s Black Truffle Frittata

Cooking time: 15 minutes


Serves: 4-6


Probably the most traditional truffle dish from Istria, Croatia’s world-famous truffle region, perfected by generations of the Karlić family. The heat of the eggs releases the aromas locked in the truffles, letting them work their black magic.




50g sliced black truffles (fresh or preserved in olive oil)

60g butter

40g grated aged sheep cheese (e.g. XO Pag)

30g Tartufata truffle spread

8 eggs

A pinch of salt, preferably bio Fleur de Sel




Melt the butter and add sliced black truffles

When the butter starts to bubble, mix in beaten eggs salt and tartufata truffle spread

When eggs are cooked, sprinkle with grated cheese

Inhale the magical aroma and serve
