Cooking time: 15 minutes
Serves: 3-4
Probably the most traditional truffle dish from Istria, Croatia’s world-famous truffle region, perfected by generations of the Karlić family. The heat of the eggs releases the aromas locked in the truffles, letting them work their black magic.
Ingredients
25g shaved fresh winter black truffles or 50g fresh summer black truffles (if fresh truffles are not in season substitute with preserved ones)
50g butter
30g grated hard aged cheese (Pag Cheese or Parmesan is ideal)
6 eggs
A pinch of salt flakes such as Nin Bio Fleur de Sel
Instructions
Melt the butter and add tartufata truffle spread
When the butter starts to bubble, mix in beaten eggs and half the grated cheese
When eggs are cooked, sprinkle with grated cheese and salt flakes
Shave fresh truffles onto the warm eggs to release their magical aroma
Serve immediately
