Tomac Blanc de Noirs Brut Nature 2020
An elegant Blanc de Noirs sparkling from the Tomac family tailor made for Martina, Tomislav's wife and a big fan of grower champagnes. A small batch of biodynamically grown Pinot Noir is harvested early to preserve acidity, spontaneously fermented, aged 10 months in a large wooden barrel, and then spends two years on the lees.
WHAT IT TASTES LIKE
Delicate red berry notes layered with yeasty brioche and almond. Expect finesse and minerality rather than overt fruitiness.
