The Tomac family is known for making some of the best sparkling wines in Croatia from their 9 hectares of vineyards in the Plešivica region south of Zagreb. Under the watchful eyes of Tomislav and Martina, the winery has lowered yields, eliminated chemicals, and fully converted to native-yeast fermentations. Their Diplomat sparkling is made with 80% Chardonnay and 20% Plavac Žuti for an extra twist of acidity. It matured on the lees for almost 4 years for those toasty, buttery notes and a long aftertaste with balanced bubbles.
